Iced Coffee

Is your $5.00 a day Iced Coffee addiction causing problems in your marriage? My husband, aka Mr.Fitness, was not too thrilled about me spending money on the 'fat drinks', as he refers to them.  So, in an effort to stop, I only would buy them on Mondays or Fridays.  I had to have something to make myself look forward to Mondays and then something to celebrate the week being over!
I recently came across The Pioneer Woman's recipe for The Perfect Iced Coffee and thought I would give it a try, if I ended up not liking it, at least I did not spend very much money.
The recipe makes 2 gallons of coffee, which is a lot but with my calculations, based on using 8ozs of coffee in your drinks, you are able to make about 32 servings and you save just shy of $160 and about 2 hours of your time by not waiting in line!
I added caramel syrup and non-fat milk (and just a little sweetened condensed milk) and the drink tastes even better than my favorite coffee shop!

Ingredients

  • 1 pound Ground Coffee (good, Rich Roast)
  • 8 quarts Cold Water
  • Milk (healthy Splash Per Serving)
  • Note: Can Use Skim Milk, 2% Milk, Whole Milk, Sugar, Artificial Sweeteners, Sweetened Condensed MIlk, Syrups...adapt To Your Liking!

Preparation Instructions

(Adapted from Imbibe Magazine by The Pioneer Woman)
In a large container, mix ground coffee with water. Cover and allow to sit at room temperature eight hours or overnight.
Line a fine mesh strainer with cheesecloth and set over a pitcher or other container. Pour coffee/water mixture through the strainer, allowing all liquid to run through. Discard grounds.    ***a coffee filter works in place of cheesecloth***
Place coffee liquid in the fridge and allow to cool. Use as needed.
To make iced coffee, pack a glass full of ice cubes. Fill glass 2/3 full with coffee liquid. Add healthy splash of milk. Add 1 tablespoons sweetened condensed milk (can use plain sugar instead), flavored sugar free coffee syrup, and stir to combine. Taste and adjust milk and/or sweetened condensed milk as needed.

Liam: Cut #2

Before their big trip to California, Liam got his 2nd haircut...Unfortunately Bryan planned it at the last minute so my hairstylist could get Liam in.  So, Liam got his haircut at SportsClips and he now looks ready to enlist in the Military!  High and tight it is!

FD 2013

This Father's Day Liam and I bought Bryan two tickets to a KC Sporting game with passes to the Beer Gardens beforehand! Grandma Berkley will take care of Liam while we go have some fun.  Since, the FD card that we made for Bryan on Shutterfly had not arrived in time for FD, Liam was a great sport and took some FD pictures for Bryan.
Isn't he just the Cutest thing ever!!

Animal Sounds

Blogger? Well, I am ashamed to admit that it has been over a month since I blogged last. What can I say, life is busy.  With nice weather, a new job, and a busy one year old, blogging has been pushed to the back burners!  However I will try to play some catch up this next week. For now, check out the sounds Liam can make! A day without cable and some one-on-one time with Mommy Liam can now make Monkey and Sheep sounds!  What a smart boy.

Pinocchio

Groupon had a fantastic special for a 5 pack of Disney Classics books for only $14.99.  So, of course, I ordered it.  Last night I was reading Liam Pinocchio. I had always heard that all Disney movies have some sort of phallic symbolism in the movies.  But, seeing the pedophilia in writing is a different story.  As I was reading this classic book to Liam, I felt like I was reading a story about Michael Jackson or all the other pedophiles out there.

"Honest John and Gideon were meeting with the Coachman who liked to lure boys to Pleasure Island.  The Coachman promised Honest John and Gideon money if they would help him find some boys....Honest John convinced the puppet that he needed some rest and relaxation -- on Pleasure Island.  Honest John and Gideon led Pinocchio down the street.  They told him all about the wonders of Pleasure Island --games, toys, candy, rides...Pinocchio climbed aboard a stagecoach filled with boys.  The Coachman cracked his whip and off they went to Pleasure Island....The boys could be as naughty as they wanted on Pleasure Island. The coachman gave orders to his men, "Shut the doors and lock them tight!"

Maybe it is my career that makes me feel disgusted about this book, but seriously WTF?

At one year of age Liam can say "Ashley".  Of course, he still refuses to say 'mama'.  Stubborn boy!

Liam: 1 Year

As I am writing this post, I cannot believe that a year has already passed and Liam is ONE year old! It is rather amazing how fast this year has gone and how much was crammed into such a short, but also long time period.  At this time last year, Bryan and I were taking our 'before' picture right before we went to the hospital.  Never would we have imagined that our first born would be a whopping 9lbs 1oz and 22 inches long! As of 1 year old, he:

  • Dr. appt on Thursday for stats
  • Can walk and is almost running
  • Climbs onto furniture
  • loves crawling through tunnels
  • Gives hugs on command
  • Is not a picky eater
  • Does not seem to have stranger anxiety
  • Got his first haircut
  • Plays soccer
  • Goes up and down stairs
  • Stands on his tip toes when trying to reach items
  • Is starting to follow two-step directions
  • Throws balls all the time to play catch or just to chase them around
  • Enjoys filling and emptying containers
  • Imitates Sounds
  • Says 'Dada' all the time

2nd Anniversary

In all the commotion of getting ready for Liam's First Birthday, our 2nd wedding anniversary was put on the back burner.  One of these days we will properly celebrate this occasion, but we were content to spending the day with the littlest Morris family member who can brings so much joy and love to our marriage!
